History
of Dempsey

Originally a nutmeg plantation before the establishment of a British military camp in the 1860s, Dempsey retains a quiet grandeur shaped by its colonial past.

Learn the craft behind kombucha through a shared brewing experience at AIR CCCC. Rooted in our belief in craft, community, and respect for natural ingredients, this session explores kombucha as both a living drink and a circular practice.
At AIR, we brew our kombucha using leftover tea that would otherwise go unused. Giving new life to surplus through fermentation. With just tea, sugar, and a living culture, a simple process becomes something vibrant, active, and deeply connected to tradition and sustainability.
By brewing together, we don’t just learn a recipe. We take part in a process that values patience, awareness, and the quiet joy of transformation.
